Jollof Quinoa: The High-Protein, Low-Carb Twist on a West African Classic

Jollof rice is a staple in West Africa, but if you’re looking for a healthier, protein-rich alternative, quinoa is the perfect swap! It absorbs flavors just like rice but packs more fiber and nutrients. Here’s how to make it:

Ingredients:

1 cup quinoa, rinsed

2 cups vegetable or chicken broth

1 cup blended tomatoes

½ cup red bell pepper, blended

¼ cup onion, blended

1 tbsp tomato paste

1 tsp garlic powder

1 tsp smoked paprika

1 tsp thyme

1 tsp curry powder

1 bouillon cube (optional)

2 tbsp olive oil

Salt and pepper to taste

Instructions:

1. Heat olive oil in a pan, add blended tomatoes, peppers, and onions. Cook for 5 minutes.

2. Stir in tomato paste, seasonings, and bouillon cube. Let simmer for another 5 minutes.

3. Add rinsed quinoa and broth, stir well. Cover and cook on low heat for 15 minutes until liquid is absorbed.

4. Fluff with a fork and serve hot.
