Ingredients:
• 1 cup quinoa, rinsed
• 2 cups vegetable or chicken broth
• 1 cup blended tomatoes
• ½ cup red bell pepper, blended
• ¼ cup onion, blended
• 1 tbsp tomato paste
• 1 tsp garlic powder
• 1 tsp smoked paprika
• 1 tsp thyme
• 1 tsp curry powder
• 1 bouillon cube (optional)
• 2 tbsp olive oil
• Salt and pepper to taste
Instructions:
1. Heat olive oil in a pan, add blended tomatoes, peppers, and onions. Cook for 5 minutes.
2. Stir in tomato paste, seasonings, and bouillon cube. Let simmer for another 5 minutes.
3. Add rinsed quinoa and broth, stir well. Cover and cook on low heat for 15 minutes until liquid is absorbed.
